Vegan Bites: Carrot Cake

 

Banana Diaries has a beautiful, moist carrot cake recipe, supposedly one-bowl, but I chickened out and kept wet and dry separate until the final mix.

YUM!

We topped it with a buttercream frosting with a hint of lemon juice.
