Vegan Bites: Galletas de Jardin (Mexican Garden Cookies)

 


Galletas De Jardin (inspired by Hayley McKee 'Sticky Finger Green Thumb')

~1c butter

~2 1/4c icing sugar (divided)

~1/2t cinnamon

~1/2t almond extract

~1c ground almonds

~2c flour

~1/4t salt

~1/2c roughly chopped almonds

~1/4c marigold petals (we used calendula)

~1/8c sage, sliced thinly

~pinch chili

Cream butter and half sugar. Beat and fold in remaining ingredients (minus chili powder). 

Roll into 1 1/4" balls.

Bake 345, 15 minutes. Cool slightly, Roll in icing sugar. Cool completely and roll in icing sugar once more. Sprinkle with chili powder.
