Vegan Bites: Rhubarb, Basil & Oat Slice

 


Rhubarb is ready!

Rhubarb, Basil & Oat Slice

~1/2c butter

~1c brown sugar

~1 egg substitute (chia egg)

~1.5c flour

~1/2t baking soda, cardamom

~1/4t salt

~1 3/4c oats

Rhubarb Compote

~3c/stalks rhubarb, cut in chunks

~1/2c sugar

~2t balsamic vinegar

Make rhubarb compote by placing ingredients in pot, bringing to boil and simmer until smooth and soft.

Beat together butter and sugar. Add in egg, followed by remaining dry ingredients. Press 2/3s of dough into loaf pan, dollop rhubarb compote on top, then crumble over remaining dough (adding extra oats if you need it slightly drier.) Bake at 350 for 25-30 minutes (may need to place foil over top to avoid burning) Top with minced basil leaves.
