Vegan Bites: Hummingbird Cake

 



This beauty of a cake is gluten-free and full of fruits and pecans. Ours came out very moist and dense, but we had to guess the baking time as the original post omitted that bit.

We baked ours as one, deep cake, so it needed 1 hour and 45 minutes until a toothpick came out clean.

Hummingbird Cake

~3c GF baking flour

~1.5c brown sugar

~2t cinnamon

~1t each salt, baking soda, baking powder

Sift dry together.

~1 1/3c coconut oil

~3 chia eggs (3T chia, 9T water)

~1 1/4c mashed banana (approx 4)

~1 8oz can crushed pineapple, including juice

~1c chopped pecans

Whisk oil and eggs. Add to dry until just mixed. Fold in fruit and nuts.

Bake at 350 in 2 greased and floured 9" round pans for 45-60 minutes/until toothpick comes out clean.

Cool and frost top and partway down sides. Sprinkle liberally with crushed pecans.
