Vegan Bites: S'mores Bars


Nobody ever said no to a burnt marshmallow, right?

All of the recipes in this book are beautiful! Not to mention most are vegan and all are gluten-free.
The s'mores bars was our first of many attempts to re-create Jeffrey Larsons mouth-watering baked goods.

S'mores Bars
~3/4c arrowroot starch
~1 & 3/4c oat flour
~1/2c almond flour
~1.5t baking soda
~1t xanthan gum
Mix dry.
~1.5c brown sugar
~1/2c vegan butter
~1/2c applesauce
Mix sugar and butter. Add applesauce and beat until fluffy.
Add dry to wet and mix well.
Pour dough into parchment lined pan (9x12" or 8" pie pan)
Refrigerate to firm.
Bake at 325 (35-40 mins for large pan, 60-70 mins for smaller) until golden and crispy.
Press marshmallows and dark chocolate chunks on top and broil lightly.
Firm to cut and serve.
