Backyard Birds: Almond Animal Crackers
Looking for an animal cracker recipe packed with protein, I found this courtesy of @mindfullymademotherhood and tweaked it with some almond flour.
- 1 cup spelt flour (plus 3/4-1c almond flour, depending on the stickiness of your dough)
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup coconut oil (melted) or butter
- 1/4 cup honey
- 1/4 cup Greek yogurt (or applesauce)
- 1 tsp vanilla extract
Instructions
1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2.In a bowl, whisk together the flour, baking powder, baking soda, and salt.
3. In another bowl, mix the melted coconut oil, honey, yogurt, and vanilla until combined.
4. Add the dry ingredients to the wet ingredients, stirring until a dough forms.
5. On a floured surface, roll out the dough to about 1/4 inch thickness.
6. Use animal-shaped cookie cutters to cut out the crackers and place them on the prepared baking sheet.
7. Bake for 8-10 minutes or until the edges are lightly golden.
8. Let them cool on a wire rack before serving.
