Vegan Bites: The Finally Falafel
FINALLY!
A falafel that is simple and delicious! Plus, everybody gave it a 5-star rating!
Whoop whoop!
It works as a DIY dry mix, so you can make the mix ahead in quantity and measure out bits as you need them. We made a few tweaks, but the original recipe is courtesy of Trudy Stone Nutrition https://trudyestone.com/easy-chickpea-flour-falafel/
Chickpea Falafel
~1c chickpea flour
~3/4t+ salt
~1/4t each baking soda, coriander, chili & paprika
~1/2t each garlic powder, cumin
Mix well. Double or triple recipe for storage.
~1/2c warm water
~half lemon, juiced
~fresh parsley/cilantro, chopped finely
Mix well and refrigerate for 15 minutes.
If this is wet to handle, you may need to add a tablespoon at a time of chickpea flour.
Roll into small balls. Warm olive oil in pan (4-5 mark on the stovetop). Drop balls in warm oil, flatten and flip as they turn golden. Serve with pita, arugula, pomegranate seed, tzatziki, cucumber thinly sliced, olives and tahini sauce.
Tahini Sauce
~1:1 water: lemon juice
~salt to taste
~parsley/cilantro to taste
~chipotle or sumac as desired
Mix vigorously.
