Vegan Bites: Kellys Snickerdoodles

 





These are absolutely as tasty as you think they are!
Packed full of sugar, best kept for special celebrations;)

~3c GF flour
~1.5t xanthan gum
~1t each baking soda, salt
~2 cane sugar
~1c plant butter
~3T ground flax + 4T water (flax egg)
~2t cinnamon

+vanilla buttercream frosting (icing sugar + butter!)

Mix dry (minus sugar). Whisk together wet and sugar.
Combine dry and wet well.
Form two cylinders with the dough and refrigerate 2 hours.

Roll chilled dough into 30 balls. Roll in cinnamon sugar. Flatten and bake at 350 for 10 minutes.

Allow to cool before making cookie sandwich with buttercream frosting.
