Vegan Bites: Lemongrass Coconut Ice Cream
~2c coconut milk
~1c sugar
~1/8c arrowroot starch
~2 stalks lemongrass, finely chopped
Warm coconut milk and sugar to dissolve sugar. Add lemongrass and allow to simmer for 2 minutes. Whisk in starch. Allow to cool to room temperature. Strain out lemongrass. Move to fridge until cool. Place a stainless steel container in the freezer. Pour cooled ice cream into steel and freeze. Churn as desired while it freezes.
