Vegan Bites: Mac 'N Cheese (2 ways)

 


Incredibly easy, delish and nutritious, Nora Cooks recipe for Mac 'N Cheese 

The only tinkering we mustered up was to double the sauce as it was incredibly dry. We also made our own breadcrumbs by toasting bread and whizzing in the blender before smothering in butter, salt and pepper. A few sprigs of fresh thyme and a beautiful meal!

Butternut Squash Pasta Bake

~16oz dry pasta (cooked and set aside)

Saute in olive oil...

~3 cloves garlic

~1/2t paprika

~1/8t pepper

~1/2-1t salt

Add

~4 cups squash, cubed

~2c veggie broth

Simmer until soft. Once cool add...

~1T nutritional yeast

~1T lemon juice

Blend until smooth. Toss pasta and squash sauce until evenly coated.

Place in roasting pan.

Mix with your hands...

~1/2c almond meal

~1t thyme

~1/2t paprika, salt

~2T nutritional yeast

~olive oil

Sprinkle almond meal topping on pasta.

Bake at 350 lightly covered for 25 minutes.

Remove cover and bake for extra 3-5 minutes until topping is golden.
