Vegan Bites: Multigrain Spiced Bread
You could switch this one up to suit your taste, substituting spices and nuts or adding dried fruit. This combo tasted like a bran muffin, minus some raisins!
Multigrain Spiced Bread
~2c spelt flour
~1/2c whole wheat flour
~1/2c steel cut oats
~1/8c walnuts
~1/8c hemp and sesame seed
~1/4c coconut sugar
~1t salt, baking soda
~pinch coriander
~1/2t each cinnamon, cardamom
~1 1/3c yogurt
Mix dry together. Add yogurt until you have soft, non-sticky dough (add a little flour if it's too sticky.)
Roll in flour to form loaf.
Place parchment in loaf pan. Place loaf in pan and smack on counter to smooth.
Slice diagonally across top.
Bake at 400 for 55 minutes.
