Vegan Bites: Savory Potato Bean Wrap

 

Bean & Potato Wrap (*inspired by Plant-Based RD https://plantbasedrdblog.com/2025/04/caramelized-leek-and-potato-veggie-wraps/

We did a wee bit of tweaking for these beautiful and savory wraps.

~2 large potatoes, cubed and boiled until tender

Saute in oil in cast iron pan...

~6 cloves garlic

~2t sumac

~1t coriander

~salt to taste

Add tender potato cubes and ..

~1-2c canelli beans (cooked)

~2T nutritional yeast

Stir well. Smash lightly.

Remove from heat and fold in...

~1c peas

~1/2c fresh dill

~1/2c fresh cilantro

~lemon zest

~2c spinach.

Spoon onto flour tortilla. Fold,  Clean and dry iron pan. Toast lightly to golden.

Serve with yogurt/dill sauce or tzatziki.
