Vegan Bites: Strawberry ShortShake with Coconut Whipped Cream

We opted for a version of their Strawberry ShortShake with our own Coconut Whipped Cream.

Strawberry ShortShake with Coconut Whipped Cream
~sheet cake of your liking, that comes out firm, baked on two cookie trays
~strawberry banana nice cream
Bake the cake on cookie sheets. Cool and crumble half, while cutting the other into firm squares.
Make nice cream by blending equal parts frozen strawberry and banana. Smooth with maple syrup.
Layer crumbled cake with nice cream and top with coconut whipped cream.
Slide cake squares and strawberries on skewer to top.

Coconut Whipped Cream
~2cups coconut cream (place coconut milk in fridge, pour off coconut water)
~5-10T powdered sugar
~2.5T arrowroot starch
Whip cream in processor, adding a little reserved coconut water as needed. Add sugar and starch. Whip well and refrigerate up to 5 days.
