Vegan Bites: Dukkah Grissini

Dukkah
~1 c pistashio
~2T coriander seed
~1T cumin seed
~2T brown sesame
~2T black sesame
~1t salt
Heat spices in dry skillet. Add brown sesame and toast minute more.
Cool and combine with other ingredients in blender.
Add to bread recipes or with dipping oil.

Grissini
~1c warm water
~3T olive oil
~1t sugar
~1t yeast
Mix with fork until creamy. Let bloom.
~2 1/4c spelt flour
~1/4c dukkah
~1/2t salt
Combine flour, dukkah and salt. Slowly add liquid.
Knead for 5 minutes adding flour just as needed.
Let rise 15 minutes.
Roll the dough into rectangle, slice and roll into long thin snakes.
Place on baking sheet.
Bake at 425 for 10-12 minutes until golden brown.
