Vegan Bites: Summer Salad with Berries & Lemongrass Tofu Wraps

 



Summer Salad with Berries

~raspberries, blueberries (or pink popcorn berries), strawberries

~mint leaves, sliced thinly

~basil leaves, torn

~mixed lettuce

~arugula

~caramelized walnuts (tossed in maple syrup and salt & baked until dry)

Lemongrass Tofu Wrap

~1c coconut aminos

~1/2c ACV

~garlic

~ginger

~fresh lemongrass

Slice ginger, garlic and whites of lemongrass. Mix with ACV and aminos. Use as a marinade for tofu steaks or strips. Bake in oven on oiled pan. Add to rice wraps with mango, pepper, basil leaves, arugula, mint leaves and cucumber.
