Elderberry Syrup

 


Our first Elderberry harvest!

Beautiful flowers always emerge but are quickly nipped to the bud by resident deer. This year the bushes were so tall, the deer couldn't reach, so the flowers morphed into millions of tiny (inedible) berries.

Though you can't eat them raw, boiled with honey and ginger, they become a cold and flu tonic. They would also serve as a beautiful, natural dye!

Elderberry Syrup

~1c elderberries

~2c water

~ginger

Boil and bring to a simmer for about 30-45 minutes. Strain and measure. Add half the total amount of honey. (1c juice=1/2c honey)
