Vegan Bites: Roast Harvest Soup

 


Roast Harvest Soup

~whole butternut squash, halved lengthwise

~3 bell peppers (red, orange, yellow) halved

~1 medium yellow zuchini

~1/4 purple onion

~4 cloves garlic, peeled

~1-2c carrots, quartered

Spread vegetables on baking tray and drizzle with olive oil.

Bake until soft and golden.

Toss in blender. Mix until smooth. Add up to

~1 c broth

~1/2c coconut milk

Warm slowly. Drizzle with coconut milk and chili oil, fresh cilantro.

*you can warm cumin, paprika, fresh thyme in oil before warming, but it was just as flavourful without the spices!
