Vegan Bites: Green Coconut Noodle Soup

Seeking some way to apparate this gloomy November? Seek no further. This comforting, flavour-filled soup takes you away on holiday.

Green Coconut Noodle Soup

~2-3 garlic cloves, grated

~3-6T ginger juice

~lemongrass (optional)

~3-6 keffir lime leaves

Saute in coconut oil. Add

~3T green curry

~4c broth

Simmer until paste is dissolved. Add

~12-15oz coconut milk

Simmer. When ready to serve add...

~100g rice vermicelli noodles

~salt to taste

Serve alongside cilantro, Thai basil and lime wedges.
