Vegan Bites: California Rolls
Rice-on-the-outside sushi!
California Rolls
~2c raw rice
~1/4c rice vinegar
~2T sugar
~1t salt
Cook rice. Allow to steam. While warm, mix vinegar/sugar/salt and pour into rice. Spread 3/4 of nori with rice mixture. Top with furikake or sesame seeds. Flip onto parchment or bamboo roller. Fill in the 'valley' with shredded tofu, julienned veggies, sprouts and avocado. Roll with parchment.
Slice rolls and top with vegan mayo, umeboshi plum paste and avocado.
