Vegan Bites: Aloo Baingan (Eggplant & Potato)

 


Indian-inspired deliciousness, with lushly spiced charred eggplant and potato in a tomato masala. YUM!! Inspired by Tea for Turmeric.

Aloo Baingan

~large eggplant

~olive oil

~salt, pepper, cumin seed, cumin

Cube and oil your eggplant, tossing in spices. Roast in oven until golden.

~yellow onion, cubed

In iron pan, saute onion in oil until fragrant and transparent. Add..

~4-5 garlic, minced

~knob of ginger, juiced

Saute and add...

~3 tomatoes, chopped

~1 chili pepper, sliced with seeds

~1t each coriander, cumin

~1/2t chili powder, turmeric, pepper

~1.5t salt

Continue to saute until tomatoes integrate. Add...

~2 large golden russet potato, cubed

~1/2c water

Turn down heat. Cover and cook for 10 minutes (potatoes tender).

Stir in eggplant and cook for another 15 minutes. Create a thick, rich masala.

Turn off heat and top with...

~1/2t garam masala

~chopped purple onion

~chopped cilantro

Serve alongside naan or basmati.
