Vegan Bites: Curry Potato Hash


 Curry Potato Hash

~roasted red pepper

Roast in oven/pan.

~new potatoes

Cook al dente. Drain and set aside.

~1 cup brown lentils

Cook al dente. Set aside.

~1/2 onion, chopped

Saute garlic in oil. Add cooked potatoes. Allow to crisp.

~2-3 cloves garlic

~1/2t cumin, coriander, turmeric

~1/4t chili flakes

~1t salt +

Add spices, garlic and cooked lentils. Add more oil if dry.

Fold in spinach and peppers before serving.

Top with coconut yogurt and fresh herbs.
