Vegan Bites: GF Strawberry Pop Tarts

GF Strawberry Pop Tarts

~1c almond flour

~1c tapioca flour

~6t refined coconut oil

~3T ground flax

~2T coconut sugar

Pulse in blender to course meal. Add...

~3T cold water

You may need additional water to make a dough ball.

Roll onto tapioca sprinkled parchment. Roll into 8x12" rectangle, 1/4" thick. Cut into 4, 3" wide strips, then each strip in half to make eight rectangles.

Top four of the rectangles with strawberry chia jam/strawberry jam, keeping jam towards center/away from edges. Top each with remaining dough. Use a fork to press edges shut. Refrigerate for 1 hour to firm.

Bake at 350 for 25 minutes, after brushing with flax egg or plant milk.

Glaze

~3T coconut butter

~1T refined coconut oil

~1t crushed, fresh dried strawberries

Melt coconut butter and oil. Whisk until smooth and add crushed berries. Glaze tarts when completely cooled and refrigerate for at least 15 minutes.
