Vegan Bites: Phyllo Apple Roses

Phyllo Apple Roses are super easy and VERY YUMMY! Like flaky, little apple pies!
Slice lengths of phyllo sheets into 2-3 inch strips. Slice apples into rounds. Place the apple rounds in a pan of water to cover and a splash of syrup. Simmer until the apples are soft enough to bend, not break.

Lay out 2-4 layers of phyllo strips. Place the apples across the strips, overlapping slightly. Roll one end tightly (the center of the rose) all the way down. Place in greased muffin cup. Drizzle butter/refined coconut oil, syrup and cinnamon over top. Bake at 375 for 10 minutes, until golden. Serve with a sprinkle of cinnamon or powdered sugar.
