Vegan Bites: Fermented Salsa

 

Delicious fermented or fresh.

Fermented Salsa

~1 red onion, diced

~2 peppers, diced

~6 tomatoes, diced

~4 garlic cloves

~4t sea salt

~juice & zest of lime/lemon

~bunch fresh cilantro, chopped

~2t cumin

Dice all veggies and grate garlic. Sprinkle with juice, salt and cumin. Toss well. Allow juices to flow on countertop. Press into mason jar. Ferment on countertop for 3 days until bubbles form.
