Vegan Bites: Moong Dal (Lentil Pancakes)

~2c red lentils, rinsed and soaked overnight
~1 onion
~1/2c cilantro, chopped
~1 hot pepper
~1c spinach
~2t cumin seeds
~2T flaxseed
~1t each chili powder, turmeric
~salt
Blend the soaked lentils in a food processor.
Chop the veggies and spices. Transfer to a bowl. Add pureed lentils and mix to a batter adding water as needed.
Fry in oil on both sides, approx 2-3 minutes each.
Serve alongside chutney and yogurt.
