Italian Green Lentil Soup

~1/2 yellow onion

~carrot

~celery

~red pepper

Cube and saute in…

~olive oil

~bay leaves

~s & p

~1/4t red chili flakes

~oregano

Add…

~1=2c green lentils

~handful of wild rice

~2-4c stewed tomato

~1-2c water/broth

Simmer until tender. Add spinach and parsley before serving.
